Jesús Durón
"I learned the art of cooking in France, and for this reason, I am filled with many positive emotions when I am in the kitchen. When I cook, I am at peace, like in a trance; I also feel love and a sense of reality. This passion for cooking has been with me since childhood when I lived with my grandmother, who would cook for me. I have continued to learn about life and living through cooking, always remaining a student.
Cooking with fresh seafood is a dream; it brings life and meaning to my kitchen. Fruits and vegetables are fragile, like flowers, and provide a myriad of flavors. Spices infuse dishes with history and evoke memories of countless places and journeys. The daily repetition of techniques, flavors, and textures refines and elevates my culinary skills, much like a musician who practices the same melody repeatedly until their hand movements produce the most exquisite notes.
My approach to cooking emphasizes preserving the purest expression of an ingredient. I work with the freshest possible products, respecting their flavors and preparing them as simply as I can. I trust in the bounty that nature provides each season and strive to use the best ingredients at their peak of maturity. Nature guides my menu.
I have a deep love for exceptional ingredients, as they inspire me and transport my thoughts to distant places. I am passionate about the vibrant, living aspect of cooking, which exists at the tips of our fingers and the forefront of our minds. It's akin to musicians blending notes to create a beautiful melody."
